In the fall of 2021, Farmhouse Restaurant bid farewell to its founding culinary virtuoso, Steve Litke. Litke, whose vision elevated the Forestville eatery to a Michelin-starred gem for 14 consecutive years, left an indelible mark on the establishment. His departure, however, signaled the beginning of an exciting new chapter, as the reins were passed to the esteemed Chef Craig Wilmer.

Chef Craig Wilmer’s Vision
Chef Wilmer brings a rich tapestry of global culinary experience to Farmhouse. A graduate of the Culinary Institute of America in Hyde Park, Wilmer honed his craft in France, Spain, and Denmark before leaving his imprint on renowned establishments like San Francisco's Michelin-starred Petit Crenn by Dominique Crenn and the celebrated COI by Daniel Patterson. Under his stewardship, the Farmhouse dining experience has evolved into a masterful showcase of haute cuisine, intertwining ancient techniques with contemporary artistry.

The Tasting Menu Experience
The restaurant’s seven-course prix-fixe menu is a symphony of flavors, expertly paired with an outstanding wine selection curated by the in-house sommelier. On a recent visit, my partner, Matthew, and I embarked on a culinary journey that exemplified the harmonious interplay of food and wine.

Course Highlights
Our evening began with an amuse-bouche that awakened the palate, followed by the Fish Ball Soup—a dish of tender fish balls bathed in an aromatic broth. This was perfectly complemented by the crisp acidity and green apple notes of Lis Neris "Lis" White Blend from Italy’s Friuli Isonzo.

Next came the Delicata and Duck Egg, a sophisticated dish paired with Vincent Joudart's Brut Reserve Champagne from the Côte des Blancs. The Champagne’s bright citrus and mineral profile elevated the richness of the duck egg and the gentle sweetness of the squash.

The Shima Aji and Beets brought land and sea together, accompanied by Porter Creek Chardonnay from the Russian River Valley. The wine’s tropical fruit and subtle oak tones enhanced the dish’s delicate balance of flavors.

A standout pairing was the Silver Pomfret, served with Château De Plaisance Cabernet Franc Blend from Anjou in the Loire Valley. Pouring the wine into the dish’s broth transformed the flavors into a soulful experience reminiscent of beef bourguignon.

The meal continued with Roe Carbonara, paired with Jean Foillard’s Gamay "Eponym" from Morgon, Beaujolais. The wine’s vibrant red fruit and floral notes beautifully complemented the dish’s rich, briny essence.

The robust flavors of lamb were impeccably matched with Bonaccorsi Syrah from Larner Vineyard, Ballard Canyon, creating a lingering harmony on the palate. A supplemental course of 30-day dry-aged Masami Ranch Supreme Strip Loin further exemplified Farmhouse’s commitment to culinary artistry.

The evening concluded with the Apple Mooncake, a dessert as innovative as it was delicious, paired with Couprie Pineau des Charentes. This pairing brought a delightful fusion of sweet and fruity richness, a fitting finale to a remarkable meal.
