Nestled high in Colorado’s Rocky Mountains at the end of a rocky road, you will find one of the Colorado’s most exclusive resorts, Dunton Hot Springs, a Relais & Châteaux property.
Settled on hot springs that bubble hot, mineral-rich water out of the ground, the resort features a unique collection of historic wooden cabins that make up what was once a semi-autonomous town. It supposedly saw the likes of Butch Cassidy, the American bank and train robber. You can even see his name is carved into the old wooden bar onsite.
With many people traveling inside the USA due to COVID-19, the resort has recently become a go to spot for the rich and famous. With the ability to come and go in style via helicopter, the resort offers some serious stunt-worthy opportunities!
While at Dunton Hot Springs, I had simple yet refined lunch made from ingredients that were locally sourced and inspired. The lamb confit served on a bed of barley risotto, with sweet potato and arugula was divine! Following our entree, chocolate chip and pretzel cookies settled our sweet tooth!
If you’re able to take a dip in the hot springs, be sure to try the manganese and lithium rich bath situated at the center of property. There’s an indoor and outdoor section, both of which I could see being amazing during a heavy winter snowstorm.
As you leave Dunton Hot Springs, it feels as though you are going forward in time and leaving a very special slice of Colorado that is stuck in the 19th century.
