The Fairmont Grand Del Mar is grand indeed! Serenely nestled among San Diego’s picturesque Los Peñasquitos Canyon Preserve, it combines European old-world charm with the luxuries of an elegant resort. It’s the perfect Southern California holiday getaway as it’s beautifully decorated and offers a stunning setting to spend quality time with loved ones.
Upon pulling up to the hotel we were instantly greeted by valet that graciously unpacked our filled-to-the-brim car and brought all of our luggage to our room. Once I walked into our Signature Poolside Room, I found a custom Grand Del Mar Veuve Clicquot bottle in beautiful packaging that was ready for me to pop!
Our poolside room had an expanded private terrace overlooking the serene adults-only Relaxation Pool. It featured European-style touches like a marble and gold bathroom with a deep soaking tub, formal upholstery, and yellow-gold striped wallpaper – adding a touch of opulence.
After, we headed to dinner at Amaya where it feels like Italy, but tastes like California! The cocktail list is fabulous and I enjoyed a refreshing and sophisticated Chamomile Cosmo featuring Botanist gin, Italicus Rosolio Di Bergamotto liquor, fresh squeezed lime juice, cranberry juice, and Fairmont Exclusive Lot 35 chamomile tea syrup.
It paired perfectly with the starters we selected:
The Grand Platter with oysters, sea scallop ceviche, chilled hamachi sashimi, and U-12 shrimp.
Also, endive with roasted red beets, apple mustard, and walnut vinaigrette.
For our main course, we indulged in:
Black Cod with hearts of palm, garlic, and crème fraîche.
San Diego Spiny Lobster that was butter poached and paired with roasted acorn squash and butternut velouté.
Wildflower Honey Panna Cotta.
It was a delicious meal and our server, Ignacio provided warm hospitality and spectacular service!
The following evening, we dined at William Bradley’s restaurant, Addison that’s associated with Relais & Châteaux and is San Diego’s first Michelin- starred restaurant. The following morning, we played golf on the resorts’ 18-hole championship golf course designed by Tom Fazio. Well before we made our way to the golf course, Valet had prepared our luxurious alligator lined golf cart for us and filled it with clubs, water, and balls – talk about service! Also, our Caddy, Nate was waiting for us. I enjoyed wandering the course as it featured dramatic elevations, diverse bunkering, and lush fairways paired with perfect weather and beautiful views – it’s quite an experience.
There’s an abundance of additional outdoor activities such as pro-style tennis courts, horseback riding, and hiking. Take a dip in one of the four heated pools onsite or relax and recharge at the resort’s award-winning spa.
