Recently I attended the Knights Bridge Winemaker Dinner at The Matheson in downtown Healdsburg. The event was hosted by Winemaker Derek Baljeu and Winery Ambassador John Bailey. This intimate gathering seamlessly blended the highest quality wines, exquisite cuisine, and a charming crowd, creating an exceptionally memorable experience.
Under the culinary expertise of Chef Dustin Valette and team, guests indulged in a four-course dinner that was a gastronomic journey.
The night began with an enticing starter – Osetra Caviar and crème fraîche delicately placed on a crisp Yukon Gold potato. It was a flawless match with the 2021 Knights Bridge Sauvignon Blanc.
In the first course, a stunning presentation of Kampachi Crudo featured Asian pear, brioche croutons, and blackberry. Its pairing with the 2021 Knights Bridge Chardonnay created a harmonious blend with the dish’s vibrant flavors.
Moving on to the second course, a Coffee Crusted Lamb Loin Chop stole the spotlight with its caramelized parsnip, whole grain mustard emulsion, and lamb jus. It was paired with the elegant and bold 2019 Knights Bridge Cabernet Sauvignon. The interplay between the coffee crust and the wine’s velvety tannins created a sensory experience that lingered on the palate.
The third course, a Butter Poached NY Strip Loin with potato espuma, smoked brisket, and candied onion vinaigrette, showcased culinary artistry at its finest. Paired with the 2017 Knights Bridge Cabernet Sauvignon, the rich, full-bodied wine complemented the buttery tenderness of the strip loin.
The dessert selection comprised two offerings. The first was an elegant Sonoma County Cheese platter with crostini, mixed berry jam, and Marcona almonds. Following that was the Volo Chocolate Pavé with sea salt caramel and a wafer crunch.
