Nestled in the hills of San Martin is Rosewood CordeValle, a private resort that rests on nearly 1,700 acres. It offers everything from world-class golf and wine tasting to spa experiences.
While there, I stayed in one of the Bungalows overlooking the Robert Trent Jones Jr. designed golf course.
During the day, I was lucky enough to play the golf course! As it was my first time ever playing golf, I think it’s going to be hard playing anywhere else in the future!
I was also fortunate to have my own caddie, Dave, who helped with my golf swing and pointed out the best ways to play the golf course.
After a couple hours of golf, I built up an appetite! Make sure to have a solid breakfast beforehand at One Iron Bar – their Huevos Rancheros are on point!
In the evening, I dined at Il Vigneto, a restaurant located within the resort that serves contemporary Californian cuisine with Mediterranean influences. My boyfriend, Matthew and I each did the three course tasting menu. It was fun to share and sample the following dishes: hamachi crudo, beef tenderloin, gnocchi, chilean sea bass, and a mushroom salad. For dessert, an apple tart and goat cheese cheesecake covered in chocolate. The sommelier, Lars selected wines to pair with the dishes and was very knowledgable and friendly.
Overall, Rosewood CordeValle was a wonderfully relaxing place to spend my weekend. The top-notch service, fabulous food, idyllic location and endless activities are the ultimate combination!
