Nestled at the base of Mt. Timpanogos is Robert Redford’s Sundance Mountain Resort where art, nature, and the community gather together. With diverse mountain recreation experiences year round there’s something for everyone!
We stopped by The Foundry Grill for lunch and the setting was rustic yet comfortable and elegant. Hearty and seasonal comfort food that’s cooked to order is served. The restaurant’s name is a nod to the frontier settlers, farmers and miners that settled the land.
We started out with a couple of appetizers – Sweet Potato Hummus and Brussels Sprouts.
I’ve never had sweet potato hummus before, but it was quite delicious and topped with pomegranate seeds, smoked maple and candied walnuts. Squash, broccolini, and plancha bread were provided for dipping.
The brussels sprouts were sweet and savory and the almond splinters sprinkled on top added a nice crunch and complimented the flavors.
I indulged in a Black Angus Wagyu Burger topped with gruyere cheese, caramelized onion, leaf lettuce, and a seeded brioche bun. You may be wondering, can I have fries with that? The answer is yes! Options are sweet potato, garlic or regular.
My boyfriend, Matthew had the Short Rib Hash topped with a poached egg and spicy hollandaise and was quite happy with his choice!
I sipped on a Redford Sour featuring Beehive Gin, lemon juice, Domaine de Canton ginger sugar, and bitters. It was a perfectly balanced cocktail with a luxardo cherry on top!
After lunch, we wandered the property and noticed the variety of rustic-chic cabins and mountain homes. There’s also a luxurious spa that’s the perfect spot to unwind and rejuvenate your mind, body, and soul.
Sundance Mountain Resort is the perfect getaway and makes you feel like you’re a world away. In reality, guests are only 45 minutes away from Park City and about an hour away from Salt Lake City International Airport.
Is the resort opening for skiing in December?
The resort will be open for skiing and snowboarding on December 4th.
